No green chile! That’s unusual for a cooked breafast around here. It begins with a base of mult-grain toast points topped by thin slices of ham. A béchamel-based cheese sauce enriches the overall flavor. Poached eggs with a light sprinkle of ground black pepper and kosher salt top it off. Delicious, with a couple of nods to healthful using 2% milk in the béchamel, lean ham and the 15 grain bread.
If you’re worried about your cholesterol, just omit the toast points. I think that will work.
As a compliant patient, I’ll follow orders to drop the toast points. At least they weren’t buttered.
